    Wedding-style Veg Biryani

    01
    • 75 min
    • Serves 6
    • Medium

Layered, sealed and slow-finished on dum, the way wedding kitchens do it — the recipe our Royal Marriage bags were made for.

    • Festive
    Method & ingredients

    Ingredients

2 cups GTS Original Bullet Kolam · 3 cups mixed vegetables (carrot, beans, potato, peas, cauliflower) · 2 onions, thinly sliced · 3 tomatoes, chopped · 1 cup thick curd · 2 tbsp ginger-garlic paste · 2 green chillies · 1 tbsp biryani masala · ½ tsp turmeric · 1 tsp red chilli powder · whole spices: 1 bay leaf, 4 cloves, 2 green cardamom, 1 cinnamon stick, 1 star anise · a handful each of mint and coriander · a pinch of saffron in 3 tbsp warm milk · 4 tbsp ghee · 1 lemon · salt

    Method

    1. Rinse the rice and soak for 30 minutes. Boil a large pot of salted water with the whole spices; cook the drained rice until 70% done — a grain should still have a firm centre. Drain and spread out.
    2. Heat the ghee; fry half the onions until deep golden and set aside. In the same pan soften the remaining onion, then add the ginger-garlic paste, chillies and tomatoes and cook down.
    3. Add the vegetables, turmeric, chilli powder, biryani masala and salt; stir in the whisked curd and cook until the vegetables are just tender and the gravy is thick.
    4. Layer: half the rice over the vegetables, then mint, coriander and fried onion; the rest of the rice; saffron milk, a squeeze of lemon and a drizzle of ghee.
    5. Seal the lid tightly (or with a dough seal) and cook on dum: 5 minutes on high, then 20–25 minutes on the lowest flame or over a tawa.
    6. Rest for 10 minutes off the heat. Open, fluff from the sides with a fork, and serve with raita and mirchi ka salan.

    Method & ingredients

    Ingredients

    1 cup GTS Original Bullet Kolam · ½ cup moong dal · 4½ cups water · 3 tbsp ghee · 1 tsp black pepper, coarsely crushed · 1 tsp cumin · 1 tbsp chopped ginger · 10 cashews · 8 curry leaves · a pinch of asafoetida · salt

    3. Heat the ghee in a small pan. Add cumin, crushed pepper, ginger, cashews, curry leaves and asafoetida; fry until the cashews turn golden.
    4. Pour the tempering over the pongal and stir it through. Loosen with a splash of hot water if it tightens.

    • Tamil Nadu
    Method & ingredients

    Ingredients

1 cup GTS Original Bullet Kolam · 2½ cups water · 1½ cups thick curd · ¼ cup milk · salt · 1 tbsp oil · ½ tsp mustard seeds · 1 tsp urad dal · 1 dried red chilli · 1 green chilli · 1 tsp grated ginger · curry leaves · a pinch of asafoetida · pomegranate, grated carrot and coriander to finish

    Method

    1. Rinse and soak the rice for 25 minutes. Cook with 2½ cups of water until slightly softer than usual, then mash gently while warm.

    4. Heat the oil; pop the mustard, then add urad dal, chillies, ginger, curry leaves and asafoetida. Pour over the rice.

Cooking tips

Five habits for long, separate grains.

  1. 01

    Rinse until clear

Wash in two or three changes of water until it runs clear — this lifts the loose starch that makes grains cling.

  2. 02

    Soak 25–35 minutes

Aged grain rehydrates evenly and cooks through without splitting. Drain well before it goes in the pot.

  3. 03

    Don’t stir while it cooks

Once the water is in, leave it alone. Stirring breaks the grain and releases starch that turns the pot gluey.

  4. 04

    Rest, covered

Five minutes off the heat lets the steam finish the job and firm each grain before you fluff with a fork.

  5. 05

    Store airtight

Keep the rice cool and dry, away from direct sunlight, and move it to an airtight container once the pack is open.
